Coconut Rice
1 1/2 cups chicken broth
1 (14oz) can coconut milk
2 tsp sugar
1 tsp salt
1/4 tsp red pepper flakes
1 1/4 cups basmati rice
1 tbsp fresh lime juice
1. Bring broth, coconut milk, sugar, salt and pepper flakes to a boil in a saucepan. Stir in rice, boil 30 seconds, cover and reduce heat to low.
2. Cook 15 minutes or until rice is tender and liquids have been absorbed. Fluff with a fork. Finish with a sprinkle of the lime juice.
