Italian Grilled Peaches

4 firm but ripe peaches
Light olive oil
2 tablespoons sugar, divided
2 tablespoons amaretto
1 tablespoon fresh lemon juice
1/2 cup mascarpone cheese, room temperature
1/4 teaspoon vanilla extract

1. Heat a grill pan to medium-high heat.

2. Quarter and pit the peaches (and for best presentation also remove the skins). Lightly brush the grill with the light olive oil and immediately add the peaches. Do not move once on the grill. Sear the peaches about 2 or 3 minutes per side until slightly softened and heated through.

3. Meanwhile, stir 1 tablespoon of sugar, amaretto, and lemon juice in a medium bowl until sugar dissolves. Add the peaches to the bowl and toss them gently. Let them sit and marinate for about 15 minutes, tossing occasionally.

4. In a separate bowl, stir the mascarpone, vanilla and the remaining tablespoon of sugar until well blended.

5. Slice each peach quarter into bite size pieces (or use a pair of kitchen scissors) and divide into four martini glasses. Top with the remaining syrup, a dollop of the mascarpone cheese and serve.
