Sweet Potato Casserole

3 1/2 - 4 pounds sweet potatoes, peeled and cut pieces
1 orange, juiced and zested
4 tbsp unsalted butter, softened
2 tbsp packed light brown sugar
1/2 cup heavy cream
1 teaspoon kosher salt
1 tsp pure vanilla extract
1 tsp ground cinnamon
1/4 teaspoon ground nutmeg

Streusel topping:
2 cups mini marshmallows
4 tbsp butter unsalted, softened
1/2 cup all-purpose flour
6 tbsp packed light brown sugar
1/2 cup old-fashioned rolled oats
1/4 teaspoon ground cinnamon

1. In a large pot add sweet potato, zest, and water (or water and juice) to cover. Bring to a boil over high heat. Cook until fork tender. Drain potatoes. Add orange juice, butter, brown sugar, heavy cream, salt, vanilla, cinnamon and nutmeg. Mash potatoes until mostly smooth and well-combined.

2. Meanwhile, in a small bowl combined softened butter, flour, brown sugar, oats & cinnamon. Mix with a fork.

3. Spoon sweet potatoes into casserole dish and smooth out. Distribute marshmallows on top, then add streusel.

4. Bake at 350ยบ for 20-25 minutes until streusel is crisp and marshmallows are golden brown.
